My Philosophy
Welcome to the Sasà Martucci pizzeria, the ideal place to start a virtuous journey among land, stories and gastronomic products of the Caserta area.

The table is an immersive experience , the springboard for a dive into the culinary history of a territory, stimulates memories, tells the adventures of passionate people who pass on their own gastronomic cultural heritage .

Our menu contains many of these stories told by the recipes of our pizzas which, like imaginary Ciceroni, will guide you on this journey made of popular tradition, places of belonging and refined ingredients fruit of the hard work of many farmers.

Local products, often PDO, PGI, from Slow Food Presidium, sustainable and zero kilometer, combined with our dough soft and well alveolate, worked daily with passion by Sasà Martucci and born from its own special selection of flours .

Over time, Sasà has started projects with many suppliers to create a short and controlled chain, where the farmer produces on precise indications di Sasà (often exclusive) and delivers the product directly to the pizzeria, skipping all the intermediate stages of distribution.

This triggers a virtuous circle and produces wealth for the territory , because it helps small farms to plan their work, supports biodiversity casertana , giving light to those products that would otherwise be lost, and even the customer will know perfectly well what he eats.

We aim for genuine return to origins: look back to be able to see further.

    Foods in vinegar, oil and brine, jams, dried mushrooms, preserves, etc.

TRIBUTE TO MY UNCLE FRANCESCO PAGLIARO

My dedication to my uncle, master pizza maker Francesco Pagliaro

I have included in my menu four pizzas that symbolise the work of my master and famous pizza maker from Caserta, my uncle Francesco Pagliaro, because it was thanks to him that I was able to grow up and become passionate about the world of pizza. Since I was ten years old, I frequented my uncle’s pizzeria, and I was fascinated by the elegance and rhythm of his movements at the pizza counter. I was able to train and grow and then follow my own personal path as a baker, my own personal quest for perfection, and what I have become is partly thanks to him. Thank you Uncle Francesco.

An extra virgin olive oil with an intense fruity flavour. Pleasant notes of aromatic herbs, green olive leaf and artichoke explosion.

Erede is a monocultivar evo oil, produced by milling only Marinese olives; a product characterized by the fact that the olives from which it is extracted have little pulp and the oil yield is low but of great quality; an excellent quality oil characterized by notes of bitterness and spiciness.

Verde is a light fruity EVO oil formed from a blend of Racioppella, Leccino, Femminella and Frantoio olives; Characterized by hints of almond and apple, with light bitterness/spicyness.

• EVO OIL monte greci

Monte Greci Extra Virgin Olive Oil is a blend of Itrana and Frantoio and is characterized by a medium/intense fruitiness, herbaceous; in the mouth it is powerful and well-structured, fluid and enveloping, the spicy note very much in evidence together with that bitterness also powerful, characterize its taste, the characteristic green tomato leaf appears clearly on the nose, it closes with notes of artichoke and officinal herbs.

Nata Terra

The “Nata Terra” oil comes from the experience of the Osiride social cooperative, through which it is committed to building a new local welfare system.

• EVO OIL ELAIOS
Terre di Molinara

Monovarietal extra virgin olive oil obtained from olives of the Ortice cultivar, sourced solely from Molinara. A medium to intense green olive fruitiness emerges on the nose accompanied by hints of freshly mowed grass, tomato, artichoke, green almond and oregano.
